Congratulations on finishing Level One of the Transitioning to Living Cuisine Program. At this point, many people wonder why they suddenly feel satisfied for 3-4 hours after eating. This happens because the body is now getting the nutrients it needs and no longer has to call out for more. As an additional benefit, many notice a decrease in cravings for unhealthy foods. I hope you have been enormously impressed by your additional morning energy. If you are eager to enhance your afternoon and evening stamina also, these nutrient dense and flavorful side dishes are an excellent addition. In this level, we will add high energy foods to your usual lunch and dinner. These delicious side dishes include salads, dressings, saloups, and sunny pâtés. You will notice there are options in these recipes, depending on what stage you are in the “soaking and sprouting” process. This practice of soaking the nuts and seeds may seem like a crazy thing to those who are new to all of this. I was confused about it when I first started. If it is overwhelming at first, you can use the nut butters in all the recipes until you are ready to take on that new endeavor. Our goal in soaking the nuts and seeds is to release the enzyme inhibitor on them, for easier digestion and better assimilation of the nutrients. After developing a routine of doing this, I found it to be easy. The higher nutrient content and better digestibility make it time well spent. If you own a dehydrator and want to save lots of time with the soaking and sprouting scenario, please go on to Level 3 to learn about creating your ‘Staple Stash’. If you do not have the Level 3 eBook yet, in it I explain the procedure for dehydrating the nuts and seeds after the soaking and sprouting procedure so they are readily available for all of your recipes. It makes the whole food prep time so much faster and easier. However, if you are still not ready for all of this yet, just use the nut butters I have listed in the recipes instead. My goal is to make this fun and easy for you so that you will want to go on, so take it one step at a time and enjoy it.
