Diabetes mellitus (DM) is now one of the most significant lifelong metabolic disorders in the world, with a disproportionately high occurrence in Asian countries. Epidemiological evidence suggests that without effective prevention and control programs diabetes will likely continue to increase globally. Diabetologists began to look for a new and better therapeutic management of DM and its associated complications from alternative and/or complementary therapies. Diet has a major role in preventing and managing DM. From this, components and their various interactions in dietary intakes have important roles in the prevention and management of DM. Chrysanthemi Flos (CF) is the flower of Chrysanthemum indicum Linne or C. morifolium Ramatuelle, and has been widely used thousands of years as a remedy for head-ache, eye diseases, heat clearing, detoxification and as an analgesic, antipyretic, anti-inflammatory, and antihypertensive. A detailed study of CF offers potential benefit in the treatment of DM and prevention of its complications. This chapter discusses how CF affects diabetes by effectively targeting the pathways of hyperglycemia and oxidative stress.
